Antoine Augustine Parmentier

Parmentier was a pharmacologist, chemist and early nutritionist in the employ of Louis XV (mid-1700s). He was a great advocate of the potato and went to great lengths to popularize its use in France. This statue comemorating his efforts is at a railway station named for him in Paris.
